Full job description
Key Responsibilities:
- Assist in the preparation and baking of Japanese bread, pastries, and confectioneries (e.g., shokupan, melon pan, anpan, dorayaki, castella, etc.).
- Support senior bakers in daily production, including mixing, shaping, proofing, and baking.
- Follow recipes and techniques specific to Japanese bakery standards to maintain authenticity and consistency.
- Ensure proper handling of baking equipment, ovens, mixers, and other tools.
- Maintain cleanliness, hygiene, and food safety standards in the kitchen.
- Assist in inventory management by preparing ingredients and reporting shortages.
- Package and present baked goods according to bakery standards.
- Learn and develop skills under the guidance of head bakers/pastry chefs.
Qualifications & Skills:
- Previous experience as Commis Baker, Assistant Baker, or Kitchen Helper in a bakery or pastry shop (experience in Japanese bakery preferred but not mandatory).
- Basic knowledge of baking processes, dough fermentation, and pastry preparation.
- Passion for Japanese bread and pastry culture with willingness to learn unique techniques.
- Ability to follow instructions and work in a fast-paced environment.
- Good teamwork, discipline, and attention to detail.
- Basic food hygiene and safety knowledge.
Education:
- Diploma or certificate in Baking & Pastry Arts (preferred, not required).
Other Requirements:
- Flexibility to work early morning shifts, weekends, and holidays.
- Physically fit to handle kitchen workload.
- Positive attitude and eagerness to learn traditional and modern Japanese baking styles.
